- This perennial can grow up to 5-6 feet tall, with large, green foliage and small yellow flowers. In cooler climates, it can be grown as an annual or overwintered indoors by saving tubers for replanting.
- Yacon plants thrive in warm weather and are simple to cultivate, similar to growing sunflowers or artichokes. Each plant can yield several pounds of roots in one season
- Yacon prefers full sun and well-drained soil. Water regularly. Harvest roots in late fall
